Bajra Muthia - Gujarati Snacks to relish with Chai
Bajra Muthia - a healthy alternative of muthia to have with evening chai
Quantity - for 2 people - lasts for 3/4 days
Ingredients -
Bajra flour - 1 cup
Whole wheat flour - 1/2 cup ( optional - can replace with Bajra)
Cumin - seeds - 1 tsp
Fennel whole - 1 tsp
Ginger - finely grated 1 inch
Green chillies - finely chopped 4/5 as per spice
Haldi - 1/2 tsp
Hing - 1/2 tsp
Red chilli powder - 1 tsp
Coriander powder - 1 tsp
Kasuri methi - 1 tsp
Onion- 1 medium finely chopped
Fresh Coriander leaves - finely chopped 4/5 strands
Mustard seeds - to temper
White sesame seeds - 1/2 tsp
Grated coconut - to garnish (optional)
Peanut oil - to temper and 1 tsp to add while making doug
Water - to make soft doug
Salt - as per taste
Appliance Needed:
Idli steamer to steam muthias
Procedure:
1. In a large bowl , mix bajra + whole wheat + all spices - cumin seeds , fennel seeds , ginger , chillies , haldi , hing , red chilli powder , coriander powder , kasuri methi , onions , fresh coriander , 1 tsp oil and salt as per taste
2. Now slowly add water and make knead very nicely to make a soft dough . Ensure it is not sticky .
3. Let the dough rest for atleast 20-30 mins .
4. In the meanwhile , put enough water in an idli steamer and allow it to get heated and ready to steam the muthias
5. After the dough is rested well ,make small rolls of muthias and place them in the dholka steaming plate of steamer . Grease the dhokla plate with oil and then arrange the muthias at equal distance .
6. Now add the plate to the steamer and let it steam for 10-12 mins
7. Once done , remove and let it cool for 5 mins . You can then cut them into more 1/2 inch disks or keep it as it is .
8 . Now in a kadai , prepare tadka by heating oil .Once the oil is hot , put mustard seeds . After mustard seeds start spluttering , add the white sesame seeds and do not wait for them to become brown or roasted .Just fry them for 1 mins and add the cooled muthias to the tadka .
9 . Gently roast muthias in the tadka .Ensure all the muthias are nicely covered with sesame seeds and appear roasted (bit brown) .
10 . Garnish with more fresh coriander leaves and coconut .
Serve hot with garam masala chai :)
