Tomato and Herbs Pull Apart Bread - first hand and time when we made any kind of pav at home !

Tomato and Herbs pull apart bread - Recipe based on budgetbytes blog . Classic bread dish for any potluck summer party

Quantity - 1 loaf 

Ingredients -

For Masala/Herbs paste-

Olive Oil - 1/4th cup
Garlic - 6/7 pods 
Dried Basil - 1/2 tsp
Dried Oregano - 1/2 tsp
Dried Thyme - 1/4 tsp
Dried Rosemary - 1/4 tsp
Red Chilli Flakes - 1/2 tbsp or as per spice
Salt - as per taste 
Black Pepper - 1/2 tsp 
Tomato Paste (whole food brand) - 3 oz or 5 tbsp 
Honey - 1/2 tsp 

For Bread -
 
Warm Water - 1 cup
Dry active Yeast - 2 tsp 
Sugar - 1/2 tsp
Olive Oil - 1 tbsp
Maida - 3 cups
Salt - as required
Parmesan Cheese - 1/4 cup 

Procedure -

1. First step is to prepare the tomato sauce/paste and allow it to cool down . For this in a saucepan , heat olive oil . In meanwhile , mince garlic and keep it ready . 
2. To the hot oil , add minced garlic and all other dry spices - basil , oregano , thyme , rosemary , chilli flakes , black pepper and mix well . 
3. After the spices are cooked for 2 mins , add the tomato paste and stir well to blend it with all the spices. Add honey and mix together nicely . Allow all of this to cook for 5 mins without cover and then switch off the flame and allow this to cool completely . 
4. Now to prepare the bread , in a big bowl, first take warm water and add sugar and yeast and gently mix it . Then allow it to rest for 5 mins or until a frothy layer develops on the top . 
5. In another bowl , add 1 cup of maida and some salt and mix them . 
6. Next add 1 tbsp of olive oil to the yeast mixture and mix well . 
7 . Start adding the maida taken out into this yeast mixture and slowly mix . Usa a spatula to mix . Next keep adding flour 1/2 cup at a time and mixing . 
8 . Keep mixing till you form a sticky ball of dough which can no longer be mixed or stirred with a spoon . This is an indication that now the dough needs kneading . By now you would have used 2 cups of maida total.
9 . Transfer the dough to a clean working surface and keep another 1 cup of maida ready . Sprinkle some of this maida to the working surface and start kneading the dough . Knead nicely and keep incorporating more maida into the dough . In about 5/8 mins , you would have formed a soft dough of maida . Tuck it nicely and allow it to rest for 5 mins covered . 
10 . After 5 mins , cut the dough into approx 48 small balls of 1 inch each . You might get more or less balls depending on the size you cut into . 
11 . Now is the time to fix the cooled tomato herbs paste and parmesan cheese with this cut pieces . Ensure all the pieces are nicely coated with this herbs paste and cheese . Mix well and then arrange them in a bundt cake pan . Grease the pan with olive oil before . Let it rest for 1 hour by covering with plastic foil .
12 . After 1 hour , we are ready to bake . Pre heat oven to 350 F . Once preheated , put the pan inside and see the bread rising while it cooks . Cook for 30 mins . 

Serve hot and pull apart :) . You can make a pesto dipping or just enjoy it with garam chai !!!
