 Sev Batata Puri - classic mumbai style chaat

Quantity - Makes aprox 8 plates of sev puri . Each plate has 7 puris

Ingredients:

Puri for sev - store bought any brand . 

Thin sev - store bought

Potatoes - 5 medium size

Onion - 1/2 finely cut as required

Tomatoes - 3/4 chopped finely as required

Chaat masala - to sprinkle as required

Fresh Coriander finely chopped - for garnsih

Sweet chutney :

Tamarind - one small lemon size 

Dates -10/12

Jaggery - one tsp

Red chilli powder - 1 tsp

Jeera powder - 1 tsp

Salt - as per taste

Green chutney -

Mint bunch - 1/2

Coriander bunch - 3/4th

Ginger -1/2 inch grated

Green chillies - 5/6 as per spice

Salt - as required

Lemon juice - squeezed from half lemon 

Red chutney (optional)

Red chillies soaked - 5/6 

Kashmiri chilli - 1/2 soaked

Garlic - 5/6 pods finely chopped

Salt as required


Procedure -


1. Boil potatoes in cooker or instant pot . Let them cool and then remove skin . Mash them nicely with a fork and add salt as required . Also add some chaat masala while mixing/mashing . Potatoes are ready.

2. Next , prepare sweet and green chutney . For sweet chutney, soak tamarind in a bowl of warm water for 20 mins . They remove tamarind extract and cook it in a saucepan with deseeded dates and jaggery . Add half cup of water . Mix everything well and cook it on medium flame . Once half done , add red chilli powder , jeera powder and salt as per taste . Mix well and let it cool down . Once it is cooled , grind it into fine paste . Sweet chutney is ready.

3. For green chutney , wash mint leaves and remove from stalk . Wash coriander bunch . Chop chillies roughly and grate ginger. Then grind all of these into a smooth paste . Add little water for grinding . Remove and add salt as per taste and squeeze lemon juice and mix well .

3. Finally, chop onions and tomatoes finely .Keep fresh coriander chopped for garnishing .

4. To assemble sev puri , take a plate and arrange 7 puris in a circle with one puri in center . Start with boiled mashed potatoes . Then add onions and tomatoes . Add randomly and be generous . Followed by green , red and sweet chutney . Then generously sprinkle sev and chat masala and finish with fresh coriander . Also you can add some more chutney on the top if you like it more wet .
