Dahi vada - my personal favorite !

Dahi vada - nothing better than enjoying a soft tasty vada immersed in just right flavored dahi !

Quantity - 21 vadas

Ingredients -
For Vada:
Whole Without skin Urad dal - 1 cup 
Green Chillies - 4/5 
Ginger - 1 inch and some more
Salt - to taste
Peanut oil - for frying
Water - 1/2 cup for grinding 

For dahi -
Home made dahi
Green chillies - 4/5
Ginger - Half inch
Coriander powder - 2 tsp
Salt - as per taste

For garnish -
Coriander powder 
Red chilli powder
Cumin powder
Chat masala (optional)
Tamarind date chutney (recipe to follow)
Green chutney (recipe to follow)
Nylon Sev 
Pomegranate or Cranberries 

Appliance needed-
Ultra stone grinder or Preeti mixer 

Procedure -

1. First we need to soak urad dal in enough water for atleast 10 hours or overnight.
2. Next is grind urad dal nicely using ultra grinder or mixer . Ensure you add 1/2 cup water or as required just to get the batter flowing and not sticking to grinder . Consistency is important here - we do not want very watery batter . Batter should be bit grainy and you should be able to form a ball from it to fry .
3. Heat oil in kadai from frying the vadas . In the meanwhile , you can remove the batter in a big bowl and add finely chopped green chillies and ginger to it . Also add salt as per taste and mix everything well .
4. Once the oil is hot , start frying vadas by making small balls out of the batter and putting in oil . Keep a colander lined with napkin to soak excess oil , next to your frying kadai . Also , keep another big vessel filled with warm water and salt ready . And finally keep a big plate or a container ready to store the fried vadas.
5. Once first batch of vadas are ready , remove them on the paper towel to get rid of any access oil . Allow it to cool down for 5  mins and then put these fried vada in the big bowl of salt water . Let them soak for 2 mins . Then gently squeeze the vadas to remove any water and transfer them to another dry container . Cover this container and repeat it for all fried vadas . This helps to remove oil from vadas and also makes them soft to absorb all dahi which we will add later .
6. After all vadas are fried and are ready , we need to prepare dahi. For this , take your home made dahi/yogurt and with help of a whisker , whisk it nicely to get a smooth texture . For 21 vada you will need atleast 8/10 cups of dahi or more . Add little water to dahi if it too thick . 
7. Next add green chillies finely chopped , ginger grated to dahi . Also add dry spices - cumin and coriander powder and add salt as per taste . Mix everything well . Dahi is ready .
8 . Atleast 20 mins before serving , pour the prepared dahi on top of our vadas . Then mix everything well gently and arrange the vadas nicely .
9. Finally for garnishing , start by putting tamarind chutney , followed by green chutney . Then using a filter garnish cumin + coriander + red chilli powder all over the prepared vadas . And in the end top it with nylon sev and some pomegranate or cranberries .

Serve chilled on a summer day along with your lunch /dinner or as snack along with some garam chai or serbet !
