Puran Poli - Holi special :)

Holi special Puranachi Poli !

Quantity - 7/8 puran polis


Ingredients :

For Puran-
Chana dal - 1 cup
Jaggery - 1 cup
Nutmeg- little for taste
Cardamom - little for taste
Water - to soak chana dal
Salt - a pinch
Haldi - a pinch

For Poli-
Wheat aata - 2 cups
Maida - 1/4 th cup
Water - to knead the aata
Oil - 2 tbsp for making aata
Haldi - a pinch
Salt - a pinch
Homemade ghee - to roast the poli on tawa

Appliance needed :
Sieve
Mixer

Procedure:

1.  Soak chana dal in water overnight . Then pressure cook it in instant pot for 20 mins manual mode or pressure cook mode . Also add pinch of haldi and salt while cooking .
2. Once the dal is well cooked , drain all the water and let it dry for atleast 5 mins . Alternatively , if there is lot of water left , you can use it to make a special dal from this water called "katachi amti"
3. Now before we start , making the puran , first lets make the poli aata . For this take the 2 cups wheat flour and 1/4 th cup maida and start kneading . Also add pinch of haldi , salt and try to knead into a soft dough.
4. When the dough is almost soft , add 1 tbsp of oil to this and continue to knead with this oil so that its all absorbed into the aata . Once done , cover the entire aata with 1 tbsp of oil and let it rest for 30 mins .
5. Now for the puran, after all the water is drained , in a kadai mix the soaked drained dal with jaggery well . Start cooking this mixture on medium flame and stirring continuously - so that it does not stick to the kadai.
6.  After about 25/30 mins , the mixtures will start leaving from the kadai and becoming hard - like coming all together and holding shape . A quick test to understand if it is well cooked and ready is by keeping a wooden spatula into the mixture and if it does not fall , its done .
7. Allow the mixture to cool and then add it to the mixture - also add the nutmeg , cardamom and pinch of salt now and grind into a smooth mixture . Do not add any water .
8. Now remove the mixture into a sieve and start passing it though it . This will ensure any hard leftover chana dal is removed and what we get is a smooth and soft puran ready to be rolled into our poli .
9.  With the aata also rested for 30 mins and soft puran ready , we are all set to start making puran polis .
10 . Heat the tawa and keep homemade ghee ready for roasting . Roll the aata into a small disc and then put a ball of puran into this . Close it like we do for parathas and then roll into a regular sized poli .
11 . Roast on both sides using generous amount of ghee and until it gives that nice brownish yellow color to the poli.

Serve hot with loads of home made ghee ! You can also take homemade aachar as a side .
