Dal ki Dulhan - complete one pot meal for your saturday lunch/dinner

Dal ki Dulhan - a very simple dal dhokli recipe which is a complete meal 

Quantity - for 2 people

Ingredients -

Tur dal - 1 cup
Yellow Moong dal without skin - 1/4 th cup
Orange Masoor dal - 2 tbsp 
Red whole chillies - 4
Cumin seeds - 2 tsp 
Red chilli powder - 2 tbsp
Haldi - 1 tsp
Hing - to temper
Fresh Coriander leaves - chopped finely few strands
Garlic - 3 pods minced
Ginger - 1/2 inch grated
Whole wheat aata - 1 cup
Ragi flour - 1/4th cup
Water - 4/5 cups for cooking dal and also for kneading dough 
Home made ghee - for cooking 
Salt - as per taste

Procedure -

1. First wash and soak the dals atleast for 20 mins .
2. Now in a kadai , heat some ghee . Once it is hot , put 1 cumin seeds and let them splutter .
3. Next add the drained dals and fry them nicely in ghee . 
4. Add haldi , red chilli powder and mix it well with dals . Add 4/5 cups of water to the dals and allow it to cook fully . Cover it with a lid and let it cook on medium/low flame . You can add some salt while cooking.
5. In the meanwhile , we need to make the "dulhaniya" . To make these , start my kneading the whole wheat aata + ragi flour . Add bit of salt to this and knead into a soft dough. 
6. Divide the flour into 2 big balls and roll these balls into a big roti . Roti should not be too thin or too thick . Then cut small circles from this big roti . You can use a small katori or the bottom of your filter coffee (traditional one) to cut into small circles . 
7 . Now to shape our flour , we need some water handy . We need to make an imaginary plus sign across the circle and apply water to all the ends of the cross . We have to make star shape of aata  . To make this , we need to fold the circle into half and then tuck the side ends inside to form a star (check Ranveer Brar's recipe video for reference) . 
8 . You can make some other shape of aata as well . As simple as just thin strips of aata , or square shaped aata . 
9 . Once , aata is shaped into desired shape , keep it ready to drop into boiling dal . 
10 . Check on dal and if it is too thick , add more water and mix well . Next put all the shaped aata into this dal and start a timer . You have to ensure aata is cooked well but not overcooked . If aata gets overcooked , it will lose its shape . So keep an eye on it and timer for 10 mins . 
11 . In the meanwhile , prepare for tadka in a small kadai . Heat ghee . Once it is hot add tadka items - cumin , hing , red whole chillies , garlic and ginger . Fry tadka nicely and pour on top of dal . 
12. Mix tadka with dal and ensure all aata is cooked as well . You will see change in color once aata is cooked and also it will puff up . 
13. Garnish with fresh coriander 

Serve hot and pour some extra ghee on top :) You can also add your favorite home made pickle or papad on side .
