Palak Dal/Amti - a slight twist to the usual palak amti .

Palak Dal - this is different preparation than what is made at home . Learnt this from my SIL (Meghna)

Quantity  - for 2 people lunch/dinner

Ingredients - 

Spinach bunch/bag -1 
Onion - 1 small or half medium (optional)
Garlic - 7/8 pods
Tamarind extract - small golf size
Tur dal - 1 cup ( can add tur 1/2 + chana 1/2)
Red whole chillies - 3/4 as per taste
Red chilli powder - 1 tsp 
Coriander powder - 1 tsp 
Mustard seeds - to temper
Cumin seeds - to temper
Haldi - to temper
Hing - to temper
Salt - as per taste
Peanut oil - for cooking 
Water - 2 cups for cooking .

Appliance needed -
Instant pot

Procedure -

1. Wash and chop spinach finely . Keep it ready .Also mince the garlic finely and keep it ready .
2. If using onion , chop it finely and keep it ready .
3. Wash and soak tur dal for atleast 20 mins .Also soak tamarind in warm water for 20 mins and then remove its extract .
4. Heat instant pot in saute mode and add oil for cooking .
5. Once oil is hot enough , add tadka items - mustard , cumin seeds , hing and haldi . Let it fry and splutter for 1 min . Now add red whole chillies and fry nicely .
6. Next add minced garlic and fry again nicely till their raw smell is gone .Add onions and little salt at this point and let it cook with garlic .
7 . Now is the time to add chopped spinach . At this point you can switch off the instant pot to avoid burning tadka items .
8. Once spinach looks a bit reduced , add tamarind extract and mix everything well . Again start saute mode and let this mixture cook in saute mode for 5 mins . 
9 . Finally add the tur dal - drain all water used for soaking it. Mix everything well .
10 . Adjust salt and add 2 cups of water . Ensure everything is mixed well and cook in manual mode for 12 minutes . Do natural release later.
11. Once pressure is release from instant pot , open and check if dal is cooked well . You might need a masher to mash the dal and combine everything together . You can again saute for 5 mins to ensure it is not too watery .

Serve hot with steamed rice + tup + your favorite homemade pickle or with Poli and tup  :)
