Paneer Tikka - Barbeque style for your summer nights

Paneer Tikka - Bbq style dry and tasty

Quantity - makes around 25- 30 regular sized bbq sticks

Ingredients -

Paneer - 1 slab Nanak brand
Red onion - 1 medium or half big
Green Pepper - 2
Red Pepper - 1 
Yellow Pepper -1 (optional)
Greek Yogurt - 2 cups 
Ginger - 1 inch grated
Garlic - 6/7 pods
Coriander powder - 3 tbsp 
Red chilli powder - 3/4 tbsp
Ajwain - pinch for taste
Kasuri methi - 1 tsp crushed
Cumin powder - 3 tbsp
Salt as per taste
Coriander fresh bunch - 1/2
Green chillies - 4
Mint leaves - 1/2 bunch 
Roasted gram dal powder/roasted besan- 1 tbsp 
Mustard oil - 2 tbsp 
Water - to grind green paste.

Appliance required-
BBQ sticks - soaked in water overnight to prevent from burning
Oven or BBQ grill 

Procedure -

1. Firstly , we need to prepare marinade atleast 2 hrs before we want to BBQ . If you can prepare previous day its going to add to the taste . 
2. Keep all the veggies - onion , peppers and paneer ready . Cut them into cubes of medium size .
3. Now to prepare marinade ,take a big glass bowl . To this add the greek yogurt and whisk it nicely to make it smooth . It is necessary to use greek yogurt , because marinade is usually thick . If you do not have greek yogurt , regular yogurt which is thicker is also fine .
4. To this yogurt , add finely grated ginger and garlic. Then add all dry masalas - coriander powder , cumin powder , red chilli powder , kasuri methi , crushed ajwain , salt to taste and mix everything well . You can also add haldi to give some color (optional)
5. Next is to make a hariyali paste - grind fresh coriander + mint + green chillies together into a fine paste . Do not add excess water while making this paste .
6. Add hariyali paste to yogurt + spices mixture and now incorporate everything well . Adjust salt here /
7 . Lastly add roasted gram dal powder/besan and mustard oil into the yogurt and mix well . Now marinade is ready .
8 . Now put all the cut veggies into this marinade and mix with your hand . Coat all marinade nicely on the veggies . Keep it covered and allow it to marinate for atleast 2 hrs . 
9 . When it's time to BBQ , preheat the oven to 450 F . In the meanwhile , prepare your BBQ sticks . Also arrange a baking pan and coat it with baking paper . Coat baking paper with oil . Then arrange the BBQ sticks of coated veggies on this pan .
10 . Bake it for 5 mins and then flip sticks to cook the other side . Bake for 5 more mins . If you want to get some crust on top , you can further broil for 1 min.

Serve hot with mint coriander chutney or with a dip of greek yogurt + red chilli + cumin powder :)
