Pulihora or Tamarind Rice - quick and tasty recipe in Instant Pot

Pulihora or Tamarind Rice - with homemade pulihora masala and instant pot goodness 

Quantity - for 2 people lunch

Ingredients -

For Pulihora dry masala -
Coriander seeds - 1 tbsp
Chana dal - 1 tbsp
Urad dal - 1 tbsp
Whole Black pepper - 1/2 tsp
Methi seeds - 1/4th tbsp 
Sesame seeds - 1 tbsp 
Whole Red chillies (can use kashmiri for color) - 4 
Mustard oil - 2 tbsp 

For Rice -
Sona Masoori rice - 1 cup 
Tamarind extract - 1 cup 
Curry leaves - 1 strand 
Whole red chillies - 3 
Cashews - 1/4th cup 
Urad dal - 1 tsp
Mustard seeds - to temper 
Haldi - to temper
Hing - to temper
Jaggery - 1 tbsp 
Mustard oil - for cooking
Water - 1 and 1/2 cup for cooking rice
Salt - as per taste

Appliance Needed -
Instant pot 

Procedure -

1.  Before we start making pulihora masala , we need to do some pre work of soaking . Soak rice for atleast 20 mins and soak tamarind in warm water for atleast 20 mins . 
2. For dry masala , in a fry pan heat mustard oil and roast everything given in dry masala list . Roast till it becomes light brown and let it cool . Then grind into a fine powder . Pulihora masala is ready
3. Start instant pot in saute mode and heat mustard oil . Once oil is hot , add tadka items - mustard seeds, hing, haldi , urad dal , cashews ,curry leaves and red chillies . Fry everything well and keep stirring to avoid tadka to be burnt in instant pot  .
4. Next add the tamarind extract - ensure u remove all pulp from soaked tamarind nicely . Add salt at this point and mix well tadka well with tamarind water . Let tamarind water in saute mode for 3/4 mins. It will reduce in size slowly . At this point add the fresh pulihora masala and mix well . 
5. Entire mixture starts becoming thick . At this point switch off the instant pot and keep stirring to avoid mixture getting stuck to instant pot . 
6. Now add the soaked and drained rice and blend it with the pulihora mixture cooked . Add 1 and half cups of water and mix well again . Adjust any salt required and close instant pot lid
7. Cook in manual model high pressure 5 mins and do a natural release . 
8 . Once you open the instant pot lid , let the steam escape nicely and then slowly fluff the rice with fork or spoon .

Serve hot with papadum or with pickle :)
