Handvo - Gujurat special lentil cake

Handvo - protein packed and tasty evening snacks ! Thanks to our friend Suruchi for introducing this to us !

Quantity - Round Lentil Cake Medium size

Ingredients -

Raw Rice - 1 cup (sona masoori variety or even basmati)
Chana Dal - 1/2 cup
Tur Dal -1/4th cup
Urad Dal - 2 tbsp
Green Chillies - 5/6 or as per spice level
Ginger - 1 inch finely grated
Red chilli powder - 1 tbsp
Haldi - 1 tsp
Hing - a pinch 
Carrot - 1/4th cup grated
Dudhi - 1/4th cup grated
Fresh Coriander - finely chopped few strands
Yogurt - 1/4th cup
Peanut oil - 1 tbsp for adding into the batter and some more for tadka 
Sesame seeds - 1 tbsp
Cumin seeds - 1 tsp 
Mustard seeds - 1 tsp
Curry leaves - 5/6 to temper
Ghee - to coat baking pan 
Salt - to taste

Procedure -

1. Wash and soak rice + all dals together for atleast 4/5 hrs .
2. Drain water from the soaked rice + dal mixture and grind them into a smooth paste . Do not add lot of water . Just add little bit to allow batter to be grinded smoothly . 
3. Now remove the batter in an airtight container and allow it to ferment overnight or atleast 10 hrs . If it is not very warm , keep the batter inside an oven with oven light on . 
4. You can skip step 3 and add 1 tsp fruit salt if you want to make instant hando 
5. Next day you will see batter is fermented well . Now time to add all the other ingredients . 
6. Start by adding yogurt and mix well . Next add finely chopped green chillies and ginger and dry masala - hing , haldi and red chilli powder . Mix well 
7. Add grated carrots and dudhi , fresh coriander , salt and 1 tbsp of peanut oil . 
8 . Mix all the mixture well to combine all ingredients well . 
9. Now grease a medium size baking pan with ghee and also preheat oven to 350 F .
10 . Pour prepared batter into baking pan and tap it few times to ensure it gets a smooth surface . 
11 . Prepare tadka now - heat oil in a small hand kadai and once it becomes hot , add mustard seeds , cumin seeds , curry leaves and sesame seeds in the end . Fry the tadka nicely and pour it over the uncooked handvo batter . Spread the tadka gently over the batter .
12 . Bake for 30-45 mins or till knife comes out clean from the batter . Remove from oven and let it cool down before cutting . 
13 . Cut it into small pieces . 

Serve with homemade Mint chutney or any of your other favorite chutney and garam masala chai :)
